​ICING ON THE CAKE CLUB!

IOTCC is for all levels of bakers, cakers, sugar artists and anyone who wants to learn the art, ages 13 and up!  We have some "Back to the Basics" classes along with some more intermediate classes.  IOTCC usually meets the third week of every month on Saturday afternoons from 2:00 PM - 4:00 PM!

CAKES FOR CAUSES KIDS CLUB!
It is great to get kids started young!  We accept children from ages 3-12 years old.  There is a different activity every month.

Come on out for some sugar and art fun!  We will meet on the 24th of September (Sunday) at 1:30 PM at Dalecke Carpentry (2143 N. Country Club Road, Tucson, AZ). The theme will be "Monster Madness".

MANGO TARTES TATIN


Ingredients:

10 1/2 oz ready-made puff pastry
3 slightly under-ripe mangoes
2 pieces preserved stem ginger
3/4 stick (6 tablespoons) sweet butter
5 1/2 tablespoons superfine or granulated sugar
1 tablespoon shelled pistachio nuts, blanched


Directions:

On a lightly floured surface, roll out the pastry as thinly as possible.  Using a cookie cutter or a saucer as a guide, cut out 6 rounds at 4 1/2 inches across.  Place on two large baking trays, prick well, and chill while preparing the topping.  Peel the mangoes, and cut the flesh away from the stones.  Cut the flesh into strips about 3/4 inch thick.  Chop the ginger very finely.

Heat the butter in a heavy skillet, then add the ginger.  Roll the mango slices in sugar, then saute in the hot butter until golden.  Cool on a plate.

Arrange mango slices on the pastry rounds, then bake for about 10 to 12 minutes in a preheated oven at 425 degrees F until the pastry is golden.

Decorate with pistachio nuts and serve immediately.

Q: How can I prevent fruit, chocolate chips, etc. from sinking to the bottom of my baked goods?
A: To prevent fruit, chocolate chips, etc. from sinking to the bottom of your baked goods, coat them evenly in flour before adding to your batter/mix.  Make sure you shake off any excess flour.

Q: How can I get my muffins, cookies and cupcakes to be more even in size?
A:  Try using a scoop so each portion size is the same. An ice cream scoop works well for muffins and cupcakes.  You can also use them for cookies or buy a smaller cookie scoop.  Even sizes will prevent some items from over cooking and some from under cooking.
