CATCH US ON THE TUCSON MORNING BLEND!

On the first Monday of every month, we have the honor of being a guest on the Tucson Morning Blend show on KGUN 9 at 11:00 AM.  We will be on the 3rd of July with our Sophia Wright and Shirlianna Dalecke.  They will show you how to make a Tres Leches cake decorated as an American Flag to celebrate the 4th of July. ​ICING ON THE CAKE CLUB!

IOTCC is for all levels of bakers, cakers and sugar artists, ages 13 and up!  We have some "Back to the Basics" classes along with some more intermediate classes.  IOTCC usually meets the third week of every month on Saturday afternoons from 2:00 PM - 4:00 PM!

Our next meeting will be Saturday, July 15, 2017

CAKES FOR CAUSES KIDS CLUB!
It is great to get kids started young!  Classes are usually the last Sunday of the month.  We accept children from ages 3-12 years old.  There is a different activity every month.

Come on out for some sugar and art fun!  We will meet on the 23rd of July (Sunday) from 1:30 PM - 3:00 PM at the Masonic Lodge #4. It will be Beach Themed fun!  Kids will decorate beach cupcakes, create their own fruit snack to eat, and make a paper shark craft to take home.

LEMON SQUARES


Ingredients:

1 cup butter
1/2 cup sugar
2 1/2 cups all-purpose flour
a pinch of salt

For the topping:
2 eggs
1 1/2 cups granulated sugar
2 TBSP flour
a pinch of salt
2 lemons, juice and zest
confectioners' sugar, to decorate


Directions:

Heat the oven to 325F.  Grease a rectangular or square baking pan with butter.

Beat the butter with the sugar in a mixing bowl until creamy.  Add the flour and salt and mix to a smooth dough.  Press the dough into the base of the baking pan.  Bake for 20 minutes until cooked and golden.

Beat the eggs with the sugar until foamy.  Mix in the flour, salt, lemon juice, and zest.  Pour the mixture over the cooled base.  Bake for a further 25-30 minutes until the filling is set.  Remove from the oven and leave it in the pan to cool.

Slice into small squares and sift over the confectioners' sugar.

Makes 12-15 squares.

Q: Why are room temperature ingredients important in baking?
A: When a recipe asks for room temperature dairy products there is a reason!  Room temperature ingredients emulsify easier and provide a more uniform structure and texture to your baked goods.  It is especially important for something like egg whites because it will give more volume to your batter.

Q: What is the best way to approach a recipe?
A:  Always read your recipe all the way through before beginning!  By reading before starting you will have the important information such as the why, how, where and when of what you are about to do.  It only takes a couple of minutes but can save you a lot of time in the kitchen and a lot less wasted ingredients!
