ASK A BAKER!

Q: When doubling a cake recipe, what if anything needs to be taken into consideration?
A: When doubling a recipe for cake, measurements of ingredients should be precise.  However, not necessarily the cooking times. With the additional batter, larger pan sizes or more pans may be used when making a cake.  This will require more baking time, however not double the amount of time.  Start with the original bake time suggested and test the cake at that time.  Add more time in 5 minute increments until cake is done.  To make sure you keep your oven at temperature, remove the cake to test and close the oven door promptly.

Q: What can I do to keep berries or raisins from sinking to the bottom in cakes and muffins?
A:
To prevent them from sinking to the bottom, mix them with just enough flour to coat them evenly.  Smaller pieces are less likely to sink, so cutting the items up into smaller pieces will also help.
